Be4ISayIDoFood: Shrimp and Scallop Fettuccine Alfredo

Mission 1:  Shrimp & Scallop Fettuccine Alfredo

Canned sauces make me a little queasy, so I embarked on the challenge of making homemade Alfredo.

It all began with grating parmesan cheese which was a total arm workout. Mixed it with the heavy cream and milk, seasoned it with salt and pepper and kept stirring.

Added the cooked fettuccine

I cooked the shrimp and scallops in chicken broth, seasoned them with creole season and added them to the fettuccine. I added parsley, seasoned to taste and I am convinced that it is better than Red Lobster's. So, Beyonce' when he hugs me good, I won't take him to Red Lobster, I'll take him to the kitchen.

I served my pasta with a Cesar Salad.

Kale/Spinach Blend. Croutons. Parmesan Cheese. & Cesar Dressing.

After making a conscious effort to stop eating out and cooking, I've lost weight, I feel better and I've saved money. It's definitely a win-win-win  situation. When I have a family, I don't want their meals to be prepared at a drive thru. So, goodbye laziness and bad habits and hello Chef D

He Gave Me What I Wanted

Amazement

This is the face you make when something amazing happens

I have an amazing best friend.

I was really bummed when he told me he wasn't going to be able to make the trip to East Texas with me. So I asked  him to take his last test before I went back home for the Smith Homestead Gathering. I gave him a week and  made sure I did not get in the way of his studying and

HE DID IT!

In one year:

He taught himself the English language

He passed all 4 sections of the GED
&
NOW
He is College Bound

His life shows me how NOTHING IS IMPOSSIBLE and if I work hard and focus I can accomplish any and everything. It has also shown me how I have taken my own education for granted every time I go to class and I don't give it 100%. He inspires me to be and do more and to indulge in a lifetime of learning. Im very proud of my best friend and will totally be cheering my heart out at his graduation.

Even the Mouse is Proud!

Understand that God knows the desires of your heart be faithful, trust Him and DO the WORK!
Nothing Is Impossible. Stay Focused

Oh She Likes Your Accent?

I was asked a strange question by my boyfriend.
He asked, “How do you feel about my accent?”
I was like I don’t mind it, it’s cute.
He went on to say, “I know American girls love accents but I want to tell you something but not to make you jealous.” I replied, “Okay.”

There is a co worker of mine and I needed help with a word and she helped me and started to cry because she loved and missed my accent while I was gone.

Oh Okay, I replied.

Then he said

I wish you loved my accent that much!

I didn't get jealous but it reminded me of:

When I had a co worker that I  thought  was a  cool person. I only thought he was cool because he was full of adventure and  hilarious. We had a lot in common and he was easy to relate to because we had  similar personalities. It was easy for me to wish my boyfriend was more like my co worker. But overtime, I learned that my  hyperactive co worker had a few bad habits and personal problems that I could NOT handle.

Any new friendship with the opposite sex outside of your relationship can seem cool because you’re getting to know someone new and you’re finding common ground. Just because your new friend has a quality that your boo does not posses that doesn’t give you permission to jump ship and abandon your relationship! Things are not always better on the other side. Over time you might find out that your new friend has an issue with anger, drinking, self esteem, personal baggage or a combination of problems.

Time is essential

Every one is struggling with something and no one is perfect. However, it is important to find someone who is willing to stick with you through all your imperfections and someone you are willing to ride for when things get rocky.

It is important that when you meet new people  outside of your relationship, that you protect your relationship!  Be careful to guard the heart of your significant other. Make sure you don’t do or say anything that you wouldn’t mind them hearing or finding out about. With the significance of social media and technology in our everyday lives you are able to talk to as many people as you want and simply delete ALL the message threads.
